The Chantry knife sharpener is designed not to damage your knife as you sharpen it. Used professionally in the meat trade at the heart of the mechanism are two small butchers steels which are the same hardness, temper and cut as professional steel.
The steels are pre-set to an optimum angle and are spring loaded to ensure your knife is not damaged as you sharpen it.
To sharpen your knife simply run the blade between the steels four or five times as if slicing bread. It really will sharpen any knife.
